This Badger Blast Corn Salsa recipe is made with just a couple handfuls of simple ingredients. It's perfect for dipping, topping, or eating by the spoonful! The flavors are a perfect balance of sweet with a hint of heat.
Ingredients:
- 1 cup light olive oil
- ½ cup apple cider vinegar
- ½ cup sugar
- 2 cans of sweet corn
- 2 cups chopped celery
- 1 cup chopped green pepper
- 1 cup chopped onion
- 1 tbs. Northern Valley Spice Co. Badger Blast
- ¼ tsp salt
- ¼ tsp pepper
Directions:
Combine and bring to boil the first 3 ingredients. Stirring often to dissolve the sugar. Remove from heat and let cool. Mix the rest of the ingredients in a bowl. Pour the oil/vinegar mixture over the top, mix and let marinate in the refrigerator overnight. Drain before serving. We think it tastes best with Frito Scoops.
