Hello Kerene – Yes, you can vacuum seal fresh egg dumplings. You may want to pre-freeze them in a single layer on a large baking sheet before vacuum sealing. When vacuum sealing delicate items such as dumplings you may want to use the pulse setting so you can control the amount of air removed so you don’t end up with one large dumpling.

Hi Penny – You can vacuum seal jam, but I would still suggest keeping it in the fridge. In canning, the jam is sealed is heat-sterilized, which kills microorganisms. This is why there is no need to store canned food in the fridge before it’s opened. The jam will stay nice and fresh for long periods of time due to the removal of air, but it must stay in the fridge or freezer.

My husband loves to make a variety of jam . We have so many open jars in the fridge which take up so much space. Could I have some in small jars for him to eat and store the rest of the big jar in vacuum sealed bags? If so could I store the bags in the pantry for a short while?
I do hope you can help me.
    Many thanks.
    Penny
